Cooks' Question

I bought in London last year 2x140g Cream of Tartar that expire September 2002 .
May I know which recipes use this natural
raising agent as I do not want to have to throw it away.

Cream of tartar can be used to give icings for cakes a creamier consistency. Also if you add a pinch when beating egg whites, this will improve the stability and volume of them. You could use it in Delia's recipe for Broccoli Soufflé with Three Cheeses, just click here to view it.
