In our house this is also known as Orange Soup because of it’s colour. The beans are in there to add protein. This is even better when re-heated, so make a big batch and have leftovers. I've not tried freezing it though.

Quick to make, this is a low fat soup is rich in beta-carotene and vitamin C.  Both vitamins boost the immune system and the beta-carotene is beneficial in protecting mucosal surfaces in the mouth, throat and lungs.

It freezes well.
