minestrone soup

Grated cheese can be sprinkled over individual bowls Great with my recipe for corn muffins

 
 
 
 

Ingredients

3 tbsp oil,1 large onion chopped,1 stick celery chopped,2 crushed cloves garlic,1 1/2 tsp dried mixed herbs,3oz pearl barley,2 medium potatoes diced,2 large carrots sliced,4 pints vegetable stock,1 large turnip peeled and diced,1 can kidney (or any type of beans),6oz macaroni (or any small pasta),2oz tomato paste or ketchup,1/4 green cabbage shredded,6oz grated cheese(optional),salt and pepper

Method

Heat oil in large pan
Add onion, celery, garlic, herbs and cook till onion is soft
Aadd barley, potatoes, carrots, and stock and bring to boil. Cover and simmer for 20 mins
Add turnip simmer for another 20 mins
Add beans, macaroni and tomato paste
Bring to boil, simmer till pasta is cooked
Add cabbage cook 5 mins
Season with salt and pepper
