Les Oeufs à la Neige

I think this probably translate to snow eggs.....and they are yummy!!



4 eggs separated,pinch salt,5 oz caster sugar,1 pt milk,1 vanilla pod,2 tbsp brandy,


Beat egg whites stiff with the salt and 2 oz of the sugar.
Bring 3/4 pt milk to the boil with the vanilla pod.
Spoon the egg whites into four oval shapes and poach them in the slowly simmering milk for 2 - 3 mins.
(to shape them, I use 2 dessert spoons and round them from one to the other, if you get my meaning).
Lift them out and leave to drain.
Make a custard from the egg yolks, milk, sugar and the poaching milk.
Strain into a dish and stir in the brandy.
Leave the custard to cool, then top with the poached egg whites.....
