curried parsnip soup

This soup is quick and easy to make and is always complimented on when sampled by friends.

 
 
 
 

Ingredients

5 large parsnips chopped 1 1/2 ltrs stock(i use chicken or veg) 1 dessert spoon sugar 2 teaspoons mild curry powder salt pepper 1 onion chopped double cream

Method

Put all ingredients into the pot and bring to the boil cook for 15-20 mins or until parsnips are cooked remove from the heat and blend with a hand blender serve hot with a desert spoon of cream
