chilli chicken giblets (chicken stomachs)
this is my own take on a mozambique recipe. its hot its tasty and you just dip crispy bread in it to soak up all the sauce!
1kg cleaned chicken giblets. 6finely chopped and deseeded bell peppers. 3 chopped onions. chilli's to taste (hot 6-8) chopped seeds in. 1 T garlic chopped. 1 tin Italian tomato's . 1 bottle red wine. 2 T olive oil. 4 t sugar. 2chicken stock cubes and 1 beef stock cube.
Methodcan be cooked in pressure cooker for 1 hour,OR just place everything in pot on the stove and cook on med heat for 2-3 hours until the giblets are tender. lid on for first hour then remove and sauce will reduce and thicken.
