Tomato and Carrot soup

Ingredients
50g butter or 1 tbsp Olive Oil,
1 small onion chopped,
1 medium potato peeled and cut into chunks,
1 clove garlic chopped or crushed,
175g carrots peeled and chopped,
1 tin chopped tomatoes,
1 pint chicken stock,
1tsp caster sugar,
1tsp dried mixed herbs,
½tsp paprika,
2tbsp tomato puree,
salt and pepper
Method
Melt butter and saute onion, potato, garlic and add the other veg and cook for a few minutes. Add stock, sugar, herbs, paprika, puree and seasoning. Stir. Bring to the boil, reduce heat and simmer for 30 mins. Puree and serve..
