Salted Fried Chicken Wings

Ingredients
12 chicken mid-joint wings, 2 tbsp oil, 8g coarse sea salt
Method
Rinse chicken wings and pat dry with kitchen towels. Season with salt. Heat oil in pan till hot and smoking. Put wings in pan and fry on high heat till golden brown. Fry top and bottom, then sides by leaning wings against pan. Do not crowd pan; cook in two batches if necessary. Lower heat to medium if oil smokes too much half way through.
