Prawns with sweet chilli sauce

2 tablespoon vegetable oil...,2 cloves garlic peeled and crushed...,3cm fresh ginger peeled and grated..,6 tablespoon sweet chilli sauce..,350g/12 oz large shellled prawns..,1 teaspoon sugar,1 tespoon conrflour,2 spring onions trimmed and sliced,,,


Heat oil in a large frying pan. Add garlic, ginger and chilli sauce and stir fry for 1 minute. Stir in prawns and sugar and cook for 3 minutes to heat prawns thoroughly. Mix conrflour with 4 tablespoons water and add to the pan. Heat, stirring until sauce thickens. Stir in spring onions
