Potato and leek soup

Can be served hot or cold



450g potatoes,1 large onion,450g leeks,50g butter/oil,2 bay leaves,1 pint vegetable stock,salt and pepper,150ml milk,150ml single cream (if not got cream just use more milk),1/2 - 1 tsp nutmeg


peel and dice potatoes
wash,Trim leeks and slice into rings
Melt butter/add oil and saute potatoes and onion with bay leaves for 5 mins
Add leeks continue to saute for 3-4 mins
Add stock, season
Simmer for 15 mins or until potatoes are cooked
Take of heat
Blend (if you like a chunky soup keep back some of the veg)
Adjust seasoning. Add cream and milk and nutmeg
