Orange Root Soup

Serve with crusty bread



2 tablespoons oilve oil,1 medium onion peeled and chopped,1 bay leaf,2 tsp soy sauce,1oz grated ginger,450g butternut squash or pumpkin,450g carrots peeled and chopped,1 3/4 pints water


Heat oil. Fry onion till soft. Add rest of ingredients and simmer for 30-35 mins till vegetables are soft. Remove bay leaf and put soup into blender. Blend till smooth
Season to taste
