Oodly Noodly Soup
Kids and adults love this heartwarming piping hot comfort soup - ready in just 10 minutes, it keeps the cold out and the love in !
2 Ready roasted chicken breasts; small tin of green giant sweetcorn; a mug of frozen peas; 1 litre (or so) good chicken stock; a mug dried vermicelli/fine italian noodles; 2 tsp dried minced garlic; 1/4 block of creamed coconut; salt and pepper to taste
Skin and finely dice chicken, put in large crock pot with garlic, peas, stock and add whole tin of sweetcorn, juice and all. Bring stock to boil then simmer. Chop creamed coconut and add - simmer gently for about 5 minutes - season to taste with salt/pepper and serve hot in bowls or mugs.
