Mushroom and roasted garlic Pate

Serve as it is on crusty bread Or place on bread, top with goats cheese and then pop in an oven until cheese starts to melt



8 cloves garlic,1lb mushrooms,2 chopped shallots,2 tbsp extra virgin olive oil,1/4 cup dry white wine,2tbsp chopped parsley,2 tbsp whipping cream -this is optional,2 tsp balsamic vinegar ,salt and pepper


Peel garlic and place on foil. Drizzle oil over garlic and make a foil parcel. Bake in oven for 20 mins at 200c
In pan put garlic, mushrooms, shallots, oil and wine
cook until mushrooms are soft and drain off liquid
Place mixture in blender and pulse until ingredients are chopped but not baby food
Remove from processor
mix in cream if using, vinegar salt and pepper to taste
