Add onions, carrot and celery and cook for 5 mins
Add garlic, curry powder, cumin and seasoning and stir for 1 min
Add stock, potatoes and cauliflower
Cook till veg is soft
Add cream if using

I like to eat this with poppadums or mini naan bread
Ingredients
1 tbsp vegetable oil,2 chopped onions,2 carrots peeled and sliced,4 stalks celery sliced,4 chopped cloves garlic,1 tbsp curry powder,1 tsp cumin seeds,salt ans pepper,2 medium potatoes diced,1 1/4 litres vegetable stock,250ml cream or plain yoghurt (optional),1 small cauliflower,
Method
Heat oil in panAdd onions, carrot and celery and cook for 5 mins
Add garlic, curry powder, cumin and seasoning and stir for 1 min
Add stock, potatoes and cauliflower
Cook till veg is soft
Add cream if using
Serve
