Mother's Soup

Best served with warm, buttered bread rolls, spread with a little pesto.



- Roughly equal proportions of potatoes carrots leeks (washed white part only). The amount of each you need depends on how much soup you want to make.,- 1 onion,- 1 cup of lentils,- garlic (again amount depends on how much you like & how much


- Finely chop onion & saute in pot with the oil
- Chop the spuds, leeks and carrots into roughly equal sizes.
- Bruise the garlic with the flat side of the knife.
- When the onion is transparent add the rest of the veg plus lentils to the pan.
