Marco Polo Starter

Serve on a large platter with the melon on it's side. If desire arrange on a bed of butter lettuce leaves.



1 Sweet Melon (Rock Melon),2 rashers Bacon,100 g Cashew nuts,1 small red Chilli (dry or fresh),10ml Avocado or Olive oil (for frying),10 ml Balsamic Vinegar


Cut the Melon in 8 pieces, chop the bacon and fry in the oil until crispy. Add chilli and fry an extra minute. Add nuts, remove from the heat and let it cool down.
Scatter mixture over Melon, drizzle with Balsamic vinegar.
