Low fat Squash Soup

Really easy to make, low fat, lots of vegetable goodness! You could use a mix of squashes, whatever is in season. I like a mix of butternut and acorn or carnival.



1 Red onion roughly chopped,1 clove of garlic left whole and unpeeled,1 Butternut squash peeled and chopped into chunks,1 Acorn or Carnival Squash peeled and chopped into chunks,Fresh coriander,1 tsp cumin seeds,1 tsp ground coriander,1 tsp


Chop all of the veg up into chunks, mix in the spices and season with salt and pepper. Put it all in a roasting tin and roast for approx 1 hour on Gas Mark 7 or until the veg is very soft. The edges will have blackened a little. The garlic will be softened and can be squeezed out.
Transfer the cooked veg to a large pan and add the hot chicken stock. Blitz until smooth with stick blender or add to food processor.
