Lettuce soup may sound unlikely, but it is really delicious and a beautiful rich green colour whatever type of lettuce is used.. No-one can ever guess what it is, but it's always popular. It's a good way to use up wilting leaves or a gl
Ingredients
12 oz potato, cubed
1 medium onion, chopped
35g butter
425ml chicken/vegetable stock
425ml milk
200g lettuce
Pinch caster sugar
Pinch grated nutmeg
Salt and ground black pepper, to taste
Method
In a large pan, melt butter and sweat potato and onion. Add the stock and milk and simmer until potato is soft. Add lettuce and simmer 3-5 minutes (it will look a slimy mess at this stage). Liquidise soup until smooth, and return it to the pan. Add the sugar, grated nutmeg and seasoning and bring back to a simmer. Serve with a swirl of cream, if wished.Recipe images are not uploaded yet.
