Leek and Stilton SOup

Divide stilton between bowls Pour hot soup over cheese - stilton melts wonderfully into the soup in great swirls



2 tbsp butter,6 cups leeks,1 cup onion chopped,2 tbsp chopped garlic,1 tsp salt,1/4 tsp pepper,3 cups potatoes cubed,1.5ml vegetable stock,250ml cream,8oz stilton cheese


Melt butter in pan
Saute onions, leeks and garlic for 5 mins
Add stock
Cook veg till soft
Puree in blender and return to pan
Add seasoning and cream and serve
