Hot Spinach Soup

Very quick and tasty..... I usually double the quantities as we like a big bowlful....



225g frozen spinach,4 tblsp butter,Salt and black pepper,300ml double cream,300ml chicken stock,


Put spinach in saucepan with butter and simmer gently, stirring continuously, until soft and tender.
Whisk in a blender and season to taste with salt and pepper.
Combine with double cream and chicken stock and heat through.
Serve immediately.
