Goats Cheese Stuffed Mushrooms

Serve with mixed leaves and a nice onion marmalade



,1 onion - chopped………,1 clove garlic - crushed……,4 field mushrooms…..,1 tomato…….,6-8 sun dried tomatoes cut into slivers…..,2 goats cheese sliced in two……,,,


Remove the stalks, chop finely, with the onion and garlic saute in a pan with a little olive oil. Spoon this into the mushroom, add a slice or two of tomato and the slivers of sun dried tomato, season and top with the goats cheese.

Bung in the oven (180C) for about 15 minutes.
