Fish Soup

top with a swirl of cream and parsley Serve with crusty bread You can use any type of fish for this soup



1oz butter,1 onion chopped,1 celery stick sliced,125g mushrooms sliced,3 tomatoes chopped,1tbsp tomato puree,pinch saffron,1 litre stock -fish is best but if not vegetable,175g salmon fillet -diced,175g peeled tiger prawns,


melt butter in pan. Add onion, celery and mushrooms. Cook for 5-6 mins until soft
Add tomatoes, puree, saffron and stock
Bring to boil then simmer for 10 mins
Season with salt and pepper
Bring back to boil and add salmon and prawns
Simmer 5 mins or until fish is cooked
