Easy Carrot Soup
Quick and easy. Great for anyone watching calories or salt intake.
1 - 2 TBSP sweet butter (no salt)
1 small shallot (or equal leek or onion)
1 pinch red pepper flakes
3 large carrots peeled and chopped
2 TBSP par boiled rice
1 TBSP tomato paste
1 pinch taragon (or herb to your taste)
3 C no salt chicken stock (1 tetra pack)
Sour Cream or low cal substitute
S & P to taste
Melt butter in soup pot. Saute shallot with rice and pepper flakes. Add carrot and saute two or three minutes. Add chicken broth and tomato paste. Bring to a boil, turn down heat and simmer until carrot is tender. Remove from heat. With an imersion blender, blend until smooth. S & P to taste. Serve with cream/sour cream on the side. Low Cal and low salt.
