Easy PEAsy Soup

Serves 2 Top with crisp croutons or crispy rashers of bacon



15g butter,1 onion chopped finely,1 carrot peeled and diced,1 medium potato peeled and sliced,1 veg stock cube,1 tsp dried mint,1 tsp dried mixed herbs,225g frozen peas,150ml milk,


In a saucepan melt butter
Cook onion till soft
Add carrot and potato cook 2 mins
Crumble in stock cube and add 250ml boiling water
Add herbs
Cover and simmer 10 mins
Add peas simmer another 5 mins
Puree soup in blender
return to pan.
Add milk season salt and pepper
