Dutch Dried Pea Soup (Hollandse Erwtensoep)

When you serve it throw some celery leaves on the top.

 
 
 
 

Ingredients

300g dried peas,4 bay leaves,2 thick pork chops,½ big celeriac or 1 small one,1 big ,Leek,Celery leaves,1 smoked sausage,

Method

Pour 1 ½ liter of water in a big soup pan and add some salt (I also add a Maggi cube at the end to enhance the taste). Add the peas, the bay leaves and the pork chops. Bring it to boil and let cook softly with the lid on for about 20 minutes (stir regularly). Prepare the celeriac, cut it in cubes and the white part of the leeks, cut in slices. Cut the celery leaves fine. Take the chops out of the pan and cut them in cubes. Put them back in the pan together with the celeriac, the leeks and the celery leaves. Also add the sausage. And let cook for another 20 minutes. Stir regularly otherwise the soup will glue to the pan. When the soup is ready take out the sausage and cut it in slices. Add it to the soup again.
