Day 2 soup - Chilli beef

This is another recipe that uses Day 1 soup as it's base so you must have some left over before you start. I always use left over minced beef for this recipe. It is a joke in our house in winter, if we have anything made with minced bee
Ingredients
1 1/2 - 2 ladles of Day 1 soup per person.
EITHER
Little cooking oil
Onion - 1/2 medium onion per person.
Minced beef - 1 table spoon per person (usually cooked left over mince)
Garlic - 1 small clove per person
Red kidney
Method
MADE FROM SCRATCH Soften the chopped onion in a little oil, when soft and bashed up garlic and fry gently. Add mince and brown. Add chopped chilli, tomato puree and a little salt and pepper, mix well. Add red beans and Day 1 soup. Stir gently to warm through. Check seasoning and add more chilli if needed. LEFT OVER VERSION. Add the left over chilli to the Day 1 soup and warm through. You may need to add a little more tomato puree and seasoning to improve the colour and taste. My folk don't like chilli soup to have rice in it but I personally do like it.Recipe images are not uploaded yet.
