Cream of Mushroom Soup

1/2 lb button mushrooms,one small onion finely chopped,1 carton alpro milk,1 carton alpro cream,4 individual bits of rosemary ,salt and coarse ground pepper black pepper,Finely chooped parsley to garnish


Gently sweat onions in a little butter or veg oil

add mushrooms and toss about for about 1/2 minute

add milk

Bring to boil and lower flame to simmer for about 40 mins.

blend to a smooth soup

add cream

retaste and if necessary you can add a bit more milk if soup is too thick

serve in a bowl with the parsley sprinkled on top
