Courgette Soup

1 small onion chopped,About 1.25 lbs. courgettes sliced,1 oz butter & a splash of oil,1.25 pints chicken or vegetable stock (or water is OK),Salt & pepper,Fresh parsley/chives/basil etc.,1 egg,1 tablespoon grated parmesan,


Soften the onion in oil & butter, and add courgettes until softening and very pale brown.
Add stock and cook 20 minutes or so, then liquidise. Season to taste.
Re-heat when ready to serve, first putting beaten egg, finely chopped herbs and parmesan in bottom of warmed bowl.
Whisking all the time, pour the boiling soup into the bowl and serve straight away.
