Cliff's Mushroom Pate

A nice simple starter that one makes in advance.



2oz butter

1 Tbs Olive Oil.

16oz Mixed Mushrooms chopped.

3 Garlic Cloves finely chopped.

4 Spring Onions finely sliced.

Juice 1/2 Lemon

4oz Mascarpone

4oz Ricotta

1 Tbs Fresh chopped coriander.

Salt and Pepper.


Heat the oil and butter in a pan.

Gently fry the mushrooms and garlic for about five minutes.

Turn off the heat and add the spring onions. Allow to cool.

Put the mushroom mixture and all the other ingredients into a food processor and blitz until smooth.

Put the mixture into several ramekins or a large dish and cover with Clingfilm.

Refrigerate for two to three hours until it has firmed up a bit.

Serve with toast made from brown bread.
