You can serve the soup with or without the veggies - I love them. You can also serve the soup with a chicken wing in the bowl. It will be very soft and juicy. Enjoy!
MethodChop carrots, celeriac, parsnip, swede into chunks
Leave fennel as it is.
Wash carcusses and chuck into a pot with the chicken breasts, the wings and necks. Use a large pot. These quantities will be enough for about 8 - 10 people and the chicken needs 'room' when cooking.
Add salt, pepper and marmite - cover with water.
Bring to simmer and reduce to a low bubble for a further 2 hours.
When cool, remove bones - discard. Remove chicken and set aside for another dish.
