Bring to boil stirring till you get a smooth sauce

then add egg yolks one by one beating well
Add cheese, mustard powder and salt and pepper
Whisk egg whites till stiff and then fold into the cheese mixture
Spoon into a 5 inch diameter buttered souffle dish. Bake in a preheated oven at 190'C for about 30 minutes

Cheese Souffle

Serve with a lovely green salad Perfect as a starter or a light lunch
Ingredients
25g butter,25g plain flour,3 eggs seperated,85g cheddar cheese grated,1/2 tsp mustard powder,salt and pepper
Method
melt the butter, stir in the flour and gradually add milkBring to boil stirring till you get a smooth sauce
