Celery soup

top with chives and serve with lots of crusty bread or croutons

 
 
 
 

Ingredients

1oz butter,1 medium onion chopped,750g celery chopped,1 large potato diced,2 tbsp chopped sage leaves,1 pint vegetable stock,1/2 pint single cream,

Method

melt butter, fry onion, potato, sage and celery for 5 mins
Add stock, bring to boil, simmer 15 mins or till veg is tender
Blitz in processor until smooth
return to pan, stir in cream
