Celeriac Soup

Garnish with dill and lots of crusty bread

 
 
 
 

Ingredients

1 tbsp butter,1 medium chopped onion,1 chopped clove garlic,salt and pepper,1 large celeriac peeled and chopped,1 large potato peeled and chopped,1 litre vegetable stock,250ml cream,pinch nutmeg,1/4 cup chopped dill

Method

Melt butter in a pan
fry onions for 3 mins
Add garlic cook 1 min
Add celeriac and potato
Pour over stock
Cook till vegetables are soft
Puree in blender
Add salt and pepper, cream, nutmeg and dill
