Celeriac Soup with Wild Mushrooms

Serve the soup with a bit of mushrooms in the middle of each plate and chopped celery leaves.



2 onions,4 tbsp olive oil,½ Celeriac,200ml cream,750ml Chicken or Vegetable Broth (cube),200g wild mushrooms,Fresh celery leaves,


Fry the onions in 2 spoons of olive oil. Add the celeriac cut in small cubes and let fry a bit longer. Add the water and the vegetable or chicken cube and let boil softly for 15 min. In a frying pan warm up the rest of the olive oil and fry the mushrooms gently. Season with salt and pepper. Puree the soup and add the cream. If the soup is too thick you can add a bit more of water. Season with salt and pepper if necessary.
