Cauliflower Cheese Soup

Serve with croutons or crusty bread



1 large cauliflower,1 larg potato diced,750ml milk,1 litre vegetable stock,Bunch spring onions sliced,25g butter,25g plain flour,100g grated cheese,


Break cauliflower into florets
Place in pan with potato, milk, stock and spring onions
Bring to boil and simmer for 20 mins until cauliflower is soft
Strain liquid into a jug. Put veg to one side
Heat butter in a pan and add flour. Cook for one min
Gradually beat in liquid to make a smooth sauce
Bring to boil, simmer 2-3 mins
Add cheese and stir till melted
Add vegetables
Puree in blender and serve
