Caldo Verde-Barley Kale Soup

Ingredients

2 tbsp olive oil -,1/2 pound garlic sausage or even better Portuguese -linguica sausage cut into fairly large dice -,1 large bermuda onion diced finely -,4 cloves of garlic chopped finely -,2 potatoes peeled and diced -,5 cups chicken or beef stock -,1/4 cup barley rinsed briefly -,1 lb. kale or curly kale leaves stripped from tough stems shredded finely -,Sea salt freshly ground black pepper ,

Method

Heat the olive oil in a heavy-bottomed soup pot or casserole over medium heat, and brown the sausage well. Remove sausage and set aside, and sweat onions and garlic in the same pot, scraping up and mixing in any brown bits left from the sausage. When onions and garlic are beginning to brown, add potatoes and cook for 5 minutes, stirring occasionally. Turn heat up to high, and add stock and barley. Bring to a boil, reduce to a simmer and cook until barley is tender. Add kale and sausage, and return to a simmer for 10 minutes. Season to taste with salt and pepper, and serve hot.
