CARROT AND COURGETTE SOUP

A swirl of cream or creme fraiche in the middle is an optional extra.

 
 
 
 

Ingredients

Small knob of butter but this is optional if weight watching,Equal quantities of carrots and courgettes,Knorr vegetable stock granules,Water or stock,Pepper and salt to taste

Method

Sweat the carrots and courgettes over a low heat in the butter until softening nicely.
Add water/stock and Knorr vegetable stock granules
When the vegetables are soft, blitz with a blending stick or put in blend and blend until smooth.
