Butternut Squash Soup

1 butternut squash (medium about 6inches in height).,1 sweet potato.,1 onion.,1/2 tsp ground cumin.,1/2 tsp ground coriander.,1/2 tsp chilli powder (optional).,1 litre veg stock (swiss bouillon),2 good squirts of tom puree.,olive oil.


chop the onion, and fry very gently in the a large pan with the cumin, coriander and chilli powders.

meanwhile, peel and chop the BNS into cubes and remove the stringy stuff and the pips.

peel and chop the sweet potato into similar sized pieces.

when the onions are soft add the BNS and the sweet potato, stir around for a couple of mins, to coast in the onions and spices.

Add the stock, and the tom puree, bring to the boil, then simmer for about 20 mins, until the BNS is nice and soft.

The with a stick blender or processor, blitz the soup heating gently for serving immediately, or put into freezeable conatiners, allow to cool, cover and freeze.
