Broccoli and cheese soup
A nice and easy soup, choose any cheese you like. My favourites are Stilton, Shropshire Blue and ordinary Cheddar is good.
Ingredients
2oz butter,
2 medium potatoes peeled and diced,
2 medium onions chopped,
1lb broccoli cut into florets,
900ml stock chicken or veg,
4oz cheese cubed,
150ml milk or cream,
salt and pepper,
½teaspoon sugar
and a grating of nutmeg,
Method
Melt the butter in a large saucepan. Add the potatoes, onion, broccoli, salt, sugar and nutmeg. Cover and steam gently on a low heat for 20mins, stirring occasionally. Add the stock to the pan and bring to the boil. Reduce heat immediately and simmer for 10mins. Blend until smooth,. Return to the heat and stir in the milk or cream and the cheese. Stir over a low heat until the cheese is well combined giving a lovely smooth soup. Season with freshly ground pepper to taste.
