Black bean Soup

Serve with sour cream and plenty of chopped coriander and spring onions.



1 14oz can black beans -,1 14oz can chopped tomatoes - ,4 rashers streaky bacon - diced - ,1 small carrot diced finely - ,1 stick of celery diced finely - ,1 medium onion diced finely - ,4 cloves garlic chopped finely - ,1/2 tsp hot chilli powder - ,1 tbsp ground cumin - ,1 bay leaf - ,Sea salt and ground black pepper


Over medium heat, fry bacon in a medium soup pot until crisp. Remove all but 1 tbsp of rendered bacon fat, add carrot, celery and onion, and allow to sweat and colour slightly. Raise heat and add garlic and bayleaf. Stir for a couple of minutes, then add beans, tomatoes and up to 2 cans of water, depending on how thick you want the soup. Stir well, add cumin and chilli powder, and bring to a boil. Simmer 30 minutes, adjust seasoning and serve.
