AVOCADO WITH WARM BACON VINAIGRETTE

Ingredients
2 RASHERS OF STREAKY BACON,2 TOMATOES SKINNED AND DICED,3 TBLSPOONS RED WINE VINEGAR,2 FL OZ OLIVE OIL,1 TBLSPOON DIJON MUSTARD,2 RIPE AVOCADOS,
Method
Cut the bacon into small pieces and fry until crisp. Throw in the toms, vinegar and oil. Stir in the mustard and leave to bubble for 1 minute. Cool dressing so it's warm rather than piping hot. Halve, stone and peel the avocadoes. Slice into thick wedges. Pour over the dressing and serve.Recipe images are not uploaded yet.
