Serves 6 - 8 Soups are very welcome most of the year, but this one will put a warm smile inside and out with its bright colour and thick texture. It can be blended to a puree or as we like it, half blended and half mashed.
I had this soup at a one day Philip Dixon Cookery School at Fawsley Hall, near Daventry... A lovely place to go to be pampered and for lunch afterwards if ever you're in the area. The chef gave us the recipe. He was a lovely man.
