This is a lovely warm soup which I make with the leftovers from carving pumpkins. It is tasty and low fat! I have this on cold days with a seeded roll for lunch.
This quantity will make 4-6 portions.

Serves 6 - 8 Soups are very welcome most of the year, but this one will put a warm smile inside and out with its bright colour and thick texture. It can be blended to a puree or as we like it, half blended and half mashed.
