Really easy to make, low fat, lots of vegetable goodness! You could use a mix of squashes, whatever is in season. I like a mix of butternut and acorn or carnival.
A spicy Indian vegetarian soup
We made this on a visit to Australia over X Mas 20072008. It was such a hit we made it several times. Our host named it Marco Polo because of the combination ofEasternWestern flavours.
This make a delicious, quick , light and colourful starter. Perfect for a summer dish for 4 people.
