The addition of the carrot makes this tomato soup a lovely thick, creamy soup, but without adding any cream.

A tomato soup that knocks spots off the tinned varieties! Try adding 1 roasted red pepper, skinned and pips removed just prior to liquidising. Also nice is 3oz goats cheese added again prior to liquidising.
