4. Tomato soup. Suitable for vegan and vegitarian diets

Serve with crusty bread OR Grand Ma Jan's Garlic and Parmasan crutons.



Basic mixed veg soup about 3 ladles,2 med fresh tomato's per serving (1 if very large) WITH ,1 small can of tomato puree OR 3 tablespoons of tomato puree.,If you don't have fresh tomato's and tomato puree you can use a 1T can of chopped tomato's but this makes the soup thin and less wholesome.,Salt and Pepper and a little oregano.,Little grated cheese cheddar is perfect.


If using fresh tomatoes (best option) skin them and chop roughly.
Put 3 1/2 ladles of basic veg soup into pan. Add skinned, chopped tomatoes, tomato puree and oregano. Heat gently. Taste for seasoning.
