Winter chutney

This is a very sweet chutney with a hint of warmth. Needs to stand for a couple of months to be at its best.
Ingredients
1 Aubergine.
2 red peppers
2 green peppers.
1 large cooking apple.
2lbs tomatoes.
4 cloves of garlic.
Cup of dried cranberries.
Cup of raisins.
3 large onions.
1 lb of dark brown sugar.
1/2 lb of Demerara sugar.
1tsp cumin
1tsp paprika.
1 tsp cayenne pepper .
1tsp ginger.
1/2 tsp cinnamon.
2 heaped Tspoons of salt.
1 1/2 pts of red wine vinegar (malt vinegar is also ok , I just prefer wine vinegars less harsh)
Method
Remove the skin from the tomatoes by soaking in boiling water for a couple of mins. De-seed the peppers , & chop up very small. Chop the apple , no need to peel. Chop all the rest of the veg into very small pieces . I tend ro blitz the onion & garlic , but that is just personal choice. Put everything into a pan over a low heat , stir until the sugar is dissolved. Allow to simmer until all the chutney has thickened & almost all the liquid is gone. This is a delicious warm chutney with just a hint of heat.it stores very wellRecipe images are not uploaded yet.
