Watermelon & Ginger Jam

I love Jam making and I wanted to make Melon and Ginger Jam. I did not know what type of Melon to use so experimented with Watermelon. It turned out to be the best one that I have made.
Ingredients
1 Watermelon approx. 2.3kg
1.3kg Sugar
100ml Water
2 sachets commercial pectin powder (I stock up on one called Vitpris when I go to France but there are others available on the net)
3 tbs finely chopped fresh Ginger
1 tsp butter
