Sweet pickled onions.
A sweet crunchy onion. They taste very nice. If you boil too much vinegar this can be stored , & used for beetroot , or any other veg when needed.
3 lbs pickling onions ,4 to 6 ozs salt ,Roughly 2 1/2 pts White wine vinegar.,12 ozs sugar.,
You can substitute honey for sugar.About 3 Tblspoons per pint
Peel the onions, & soak in salt water for 24 hours. Next day
bring the vinegar , & sugar to the boil.
Rinse the onions when they have soaked , & I pat them dry.
Put into clean jars, then pour on the very hot vinegar, cover & leave for at least 6 weeks.
