Spicy Tom Chutney - makes 450-500g

6 tbsp veg oil.,Cinnamon stick.,4 cloves.,1 tsp roasted cumin seeds.,1 tsp nigella seeds.,4 bay leaves.,1 tsp mustard seeds crushed.,800g canned chopped tom's (2 tins).,4 cloves of garlic crushed.,2 in piece of fresh ginger sliced or grated.,1 tsp chilli powder.,1 tsp g turmeric.,4 tbsp brown sugar


Pour oil into a big fry pan or pan, heat under a medium heat, whent he oil is hot fry the cnnamon cloves cumin nigella seeds, bay leaves and mustard seeds for 5 mins.

crush the garlic and them to the spice mix, fry until garlic is golden. drain the tom's, BUT KEEP the juice. Add the ginger, chilli powder, turmeric, sugar and the tom juice, simmer until reduced, add the tom's and cook for a further 15-20 mins.

pour into sterlised jars, and keep in the fridge, once opened will only last a week or so.
